(healthy) sweet tooth

We all know how much I love baking, and well the key ingredient to a good pastry is always butter. My best friend Olivia is on a diet (no bread or pasta), so I figured why not make something tasty to satisfy her sweet tooth, but keep it healthy (yes a healthy dessert). 

This recipe is very simple and so delicious- it's just not safe for those allergic to nuts (sorry!).

I call it the B-Muff (B is for brownie and Muff is for muffin) 
Mini Muffins= 22    
Regular Muffins= obo 15

1 large egg
1 cup almond butter (or can use any other nut butter) 
3/4 cup butternut squash purée
1/4 cup maple syrup (or honey)
1 tsp baking soda
3 tbs Cacao powder
2 tsp instant espresso powder
1/2 cup dairy free chocolate chips (or regular)

*Note: you can use pre-purée squash or simply bake until tender to do it yourself
You can also substitute the butternut squash with pumpkin or sweet potato purée


Preheat oven to 350°F

Grease/spray muffin pan

Combine all ingredients in a bowl, fold the chocolate chips in last

Once placed in the pan top off the muffins with some extra chips

Bake for 25 minutes
