I haven't posted any recipes in a while, but I am still making goodies- promise!

I had gone to the gym (at a non usual time for myself), and was pretty hungry when I got home. This dish is a quick, easy, & tasty; there is protein and some light rice noodles. I made veggies on the side but I want to share this delight with you all.

Chicken Pad Thai

Ingredients

8 ounces flat rice noodles (cook according to package)
1 boneless skinless chicken breast (large piece cut into pieces)
2 eggs
1 cup fresh bean sprouts
1/3 cup sliced green onions
1/4 cup sliced white onions (I used red)
1/3 cup cilantro
*Peanuts; optional

Sauce
1/4 cup ketchup
2  tablespoons fish sauce (I did't add this in, I substituted it with Sou Sauce)
1 teaspoon minced garlic
1 tablespoon peanut butter
1 juice of lime
1 teaspoon soy sauce
Crushed red pepper flakes (to your liking)

Instructions

Season chicken with pepper and salt. Cook chicken in large wok over medium heat, stir throughout until cooked. This will take about 8-10 minutes, transfer chicken to plate and set aside.
Don't forget to cook your pasta!

Whisk together all sauce ingredients and set aside.

Crack eggs over preheated pan (same one used for chicken) and fry for about a minute, break up the eggs with a spoon. Add the onions, green onions and bean sprouts. Add chicken and sauce. Noodles come next, and toss to coat noodles in the sauce. Stir in cilantro.

Ready to be served! Garnish with peanuts if desired.
