Sweet, delicious, semi healthy, banana-ish, Monday treats! No one is ever ready to go back to work on a Monday, even if you love your job, we could always use an extra day to our weekend. There is no better way than coming into the office with some yummy snacks waiting for you. 

This banana peanut butter muffin recipe is simple and tasty! I also added a little extra treat to the muffins by making a homemade banana butter frosting. It was truly a wonderful morning pick-me-up in the office. 
*I can't get over how gross these banana's look; no, they are not that mushy... I freeze the banana's that are no longer edible (to my standards) this is them thawed out. 

Flourless Banana Peanutbutter Muffins

2 ripe bananas (mashed) (makes approx 1 cup)
2 1/4 cups rolled oats
2 eggs
1/2 cup maple syrup
1/2 cup peanut butter
1 tbsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/4 cup vanilla almond milk, soy milk or regular milk
1/2 cup dark chocolate chips (I did a milk + dark chocolate blend) or dairy free

Banana Butter Frosting:
1/4 cup butter (soft)
1/2 cup bananas (mashed)
1/2 tsp lemon juice
1/2 tsp vanilla extract
3 1/4 cups confectioners sugar


Preheat the oven to 375ºF, prep the muffin tray by greasing and setting aside.

Combine all ingredients, minus the chocolate chips (we save those for later!), and blend for 30 seconds until the batter is smooth.

Add the chocolate chips into the blender, and manually mix it into the batter. If the dough is warm from being blended give it a few second to cool off before adding chocolate chips.

Pour the batter into each prepared tin cup, about 3/4 filled. Bake them for about 20 minutes or until lightly browned. Remove from trays and allow to cool on a rack for 10-15 minutes, if icing do wait 20-30 minutes.

Add together; butter, bananas, lemon juice and vanilla and beat until ingredients are combined. Add the confectioners sugar a bit of the time while stirring. If needed to make fluffier add more sugar.

*When I was stirring the icing it was a great texture and consistency; but when I iced my cupcakes it was a bit runny and I felt like I should have added more sugar to keep it more firm after the application on the muffin.
They are so good, the taste between the muffin and the frosting is just amazing!
