Here is another little flavorful recipe(s)! It is a pretty easy dish to put together, it just takes sometime with the tofu having to be left out and reduce the water, as well as the general preparation of the patties and sauce. All in all, the process is well worth it!
Ketchup and/or mayo
Preheat oven to 375 degrees F
Properly clean your parsnips, you can choose to leave or remove the skin. Slice into thin strips
Toss in a bowl with some olive oil and salt
Bake for 15-25 minutes, this will depend on the thickness of your slices. Cook until golden brown, and flip halfway
Remove from oven, and serve!
Hamburger buns (4)
Extra firm block of tofu (pressed to remove the water), cut into four sections which will make your patties
Arugula or any favorite greens (I used spinach)
Hot sauce (optional)
*Any choice of toppings!
1 tbsp dry mustard
1 tbsp onion powder (I used flakes)
1 tbsp smoked paprika
1 1/2 tsp garlic powder
1/4 tsp ground cumin
1/4 tsp ground pepper
1/4 cup and 2 tbsp ketchup
2 tbsp minced sweet onion
2 1/2 tbsp brown sugar
2 tbsp seasoned rice vinegar
1 garlic clove, minced
1/2 tsp bbq rub (recipe above)
Pinch of ground cayenne
Sprinkle of black pepper
Add all the BBQ Rub ingredients together in a small bowl and stir to combine. Set this aside.
Put all the BBQ Sauce ingredients together in a medium saucepan, stir to combine. Bring to a boil over medium-high heat; decrease the heat to low and simmer uncovered. Let this simmer for 15 minutes, stirring occasionally. Let sauce cool.
Preheat oven to 350ºF. Rub the tofu slabs all over with the BBQ Rub. Spray the pan with some cooking spray. Bake for 25-30 minutes until slightly browned, flip both sides halfway.
At about 5-8 minutes left for the tofu to be ready smear the BBQ Sauce all over the four patties (both sides) and let bake for the remainder of the time.
Toast your hamburger buns, spread one of the sides with mayo. Add the tofu burger, greens and any other toppings you'd like in there. Serve & enjoy with your parsnip fries.
